What makes hand-pulled noodles special?
Hand-pulled noodles - la mian - have a texture that factory noodles can't match. They're slightly irregular, with a chewiness that comes from the gluten development during pulling. Each strand has character.
The technique originated in Lanzhou, in northwest China, where Muslim noodle makers have been perfecting it for centuries. A skilled noodle puller can turn a block of dough into hundreds of strands in under a minute.

Why Soho needs halal noodles
Soho is one of London's most diverse neighbourhoods. It's home to people from every background and every dietary requirement. Yet until The Greedy Sheep opened, there wasn't a single fully halal Chinese noodle restaurant in the area.
